Thai Curry
Ingredients:
- Low protein veg (we used 30g/1oz cauliflower, 20g/0.7oz bell pepper, 15g/0.6oz mushrooms, 15g/0.6oz green beans)
- 2 tsp/10g Thai green curry paste
- 30g/1oz onion, chopped
- 50g/1.8oz Cambrooke Short Grain Rice
- 35g / 1.2oz coconut milk
You will also need 1 tsp. olive oil.
Method:
- Fry onion in 1 tsp. oil until browned
- Add veg and stir for 5 minutes.
- Add paste and stir for 1 minute.
- Add coconut milk and stir for 5 minutes.
- Serve with Cambrooke Short Grain Rice.
