Vegetable Soup

Ingredients:

  • 30g/1oz onion, chopped
  • 30g/1oz leek, sliced
  • 50g/1.8oz sweet potato, chopped
  • 40g/1.4oz chopped tomatoes
  • 1 tsp/3g Cambrooke Chicken Consommé (+1 cup boiling water)

You will also need 1 tbsp. oil, salt and pepper to season.

Directions:

  • Fry onions in 1 tbsp. oil for 2-3 minutes.
  • Add vegetables and stir for 2-3 minutes.
  • Add tomatoes and Consommé. Bring to the boil, and then simmer for 4-5 minutes.
  • Once all vegetables are tender, serve!
