Fruit Cupcakes

Ingredients:

  • 1 tsp baking powder
  • 5 tbsp/ 70g melted butter
  • 2 tbsp water
  • 1 cup/ 110g Wel-made Baking Mix or Baking Mix
  • 1 cup/ 110g white sugar
  • 1/3 cup / 70ml rice milk
  • 2 tsp food colouring – any colour

Method:

  • Preheat oven to 350F.
  • Cream the butter and sugar. Add baking powder and baking mix and combine.
  • Gradually add milk and water and combine until creamy and smooth.
  • Add food coloring.
  • Line the cupcake tray and spoon 2 tbsp mixture into each case.
  • Makes 6 cupcakes or 8-12 small.
  • Bake for 15-20 minutes at 350F.

To Decorate

Ingredients:

  • 1 sliced kiwi
  • 2 sliced strawberries
  • 1 tbsp/ 14g melted butter
  • 15 tbsp/ 120g icing sugar
  • 1 tsp food colouring

Method:

  • Gradually mix melted butter into the sugar.
  • Stir in food colouring.
  • Ice the cupcakes.
  • Add fruit.
