Canada Day Carrot Cake

Ingredients:

  • 150 g / 1.3 cup Wel-made Baking Mix
  • 12 g / 1 Tbs dates
  • 110 g / 2/3 cup carrots (grated)
  • 35 g / 1/4 cup vegetable oil
  • 23 g / 1/8 cup brown sugar
  • 65 g / 1/2 cup white sugar
  • 2 g / 1 tsp baking powder
  • 1 g / 1/4 tsp salt
  • 2 g / 1 tsp baking soda
  • 3 g / 1 1/2 tsp cinnamon
  • 1/3 cup water

Directions:

  • Cut out parchment paper to line the tin and push into bottom of the tin
  • In a mixing bowl, add carrots, white sugar, brown sugar and vegetable oil and mix together until smooth
  • Ad Wel-made baking mix, baking powder, salt, baking soda, cinnamon and dates
  • Mix together until smooth
  • Add water and mix again
  • Pour mixture into tin and bake for 25 minutes at 350 F
  • Leave to cool
  • Decorate for July 1!
