Low Protein Tomato Risotto (PKU)
Ingredients:
- 1/2 cup Cambrooke Shortgrain Rice
- 1/3 tin (150g) chopped tomatoes
- 1/4 onion (chopped)
- 150ml Cambrooke Chicken Consommé (1 tsp Consommé powder+water)
- 5 cherry tomatoes
- 1/2 tbsp butter
Directions:
- Tip butter, rice and onion in dish.
- Cover and microwave for 1-2 minutes.
- Then mix in the consommé and chopped tomatoes.
- Microwave for 5 minutes (checking and stirring it every 1-2 mins).
- Then add cherry tomatoes.
- Cook for further 5 mins until rice is cooked.
- Cool and add butter.
- Season to taste.
