Canada Day Carrot Cake
Ingredients:
- 150 g / 1.3 cup Wel-made Baking Mix
- 12 g / 1 Tbs dates
- 110 g / 2/3 cup carrots (grated)
- 35 g / 1/4 cup vegetable oil
- 23 g / 1/8 cup brown sugar
- 65 g / 1/2 cup white sugar
- 2 g / 1 tsp baking powder
- 1 g / 1/4 tsp salt
- 2 g / 1 tsp baking soda
- 3 g / 1 1/2 tsp cinnamon
- 1/3 cup water
Directions:
- Cut out parchment paper to line the tin and push into bottom of the tin
- In a mixing bowl, add carrots, white sugar, brown sugar and vegetable oil and mix together until smooth
- Ad Wel-made baking mix, baking powder, salt, baking soda, cinnamon and dates
- Mix together until smooth
- Add water and mix again
- Pour mixture into tin and bake for 25 minutes at 350 F
- Leave to cool
- Decorate for July 1!
