Thai Curry
Ingredients: Low protein veg (we used 30g/1oz cauliflower, 20g/0.7oz bell pepper, 15g/0.6oz mushrooms, 15g/0.6oz green beans) 2 tsp/10g Thai green curry paste 30g/1oz onion, chopped 50g/1.8oz Cambrooke Short Grain Rice 35g / 1.2oz coconut milk You will also need 1 tsp. olive oil. Method: Fry onion in 1 tsp. oil until browned Add veg and stir for 5 minutes. Add paste and stir for 1 minute. Add coconut milk and stir for 5 minutes. Serve with Cambrooke Short Grain Rice.
