Vegetable Soup

Ingredients: 30g/1oz onion, chopped 30g/1oz leek, sliced 50g/1.8oz sweet potato, chopped 40g/1.4oz chopped tomatoes 1 tsp/3g Cambrooke Chicken Consommé (+1 cup boiling water) You will also need 1 tbsp. oil, salt and pepper to season. Directions: Fry onions in 1 tbsp. oil for 2-3 minutes. Add vegetables and stir for 2-3 minutes. Add tomatoes and Consommé. Bring to the boil, and then simmer for 4-5 minutes. Thai Curry

Ingredients: Low protein veg (we used 30g/1oz cauliflower, 20g/0.7oz bell pepper, 15g/0.6oz mushrooms, 15g/0.6oz green beans) 2 tsp/10g Thai green curry paste 30g/1oz onion, chopped 50g/1.8oz Cambrooke Short Grain Rice  35g / 1.2oz coconut milk You will also need 1 tsp. olive oil. Bruschetta

Ingredients: 1/2 Cambrooke Artisan Bread, sliced 3 tomatoes, chopped 2 tbsp. olives, crushed or blended into a tapenade 1 tbsp. balsamic glaze 2 garlic cloves (thinly sliced) in 1 tbsp. extra virgin olive oil Optional: Basil or parsley to garnish.
