  • Vegetable Soup

    Vegetable Soup

    Ingredients:

    • 30g/1oz onion, chopped
    • 30g/1oz leek, sliced
    • 50g/1.8oz sweet potato, chopped
    • 40g/1.4oz chopped tomatoes
    • 1 tsp/3g Cambrooke Chicken Consommé (+1 cup boiling water)

    You will also need 1 tbsp. oil, salt and pepper to season.

    Directions:

    • Fry onions in 1 tbsp. oil for 2-3 minutes.
    • Add vegetables and stir for 2-3 minutes.
    • Add tomatoes and Consommé. Bring to the boil, and then simmer for 4-5 minutes.
    • Once all vegetables are tender, serve!

  • Thai Curry

    Thai Curry

    Ingredients:

    • Low protein veg (we used 30g/1oz cauliflower, 20g/0.7oz bell pepper, 15g/0.6oz mushrooms, 15g/0.6oz green beans)
    • 2 tsp/10g Thai green curry paste
    • 30g/1oz onion, chopped
    • 50g/1.8oz Cambrooke Short Grain Rice 
    • 35g / 1.2oz coconut milk

    You will also need 1 tsp. olive oil.

    Method:

    • Fry onion in 1 tsp. oil until browned
    • Add veg and stir for 5 minutes.
    • Add paste and stir for 1 minute.
    • Add coconut milk and stir for 5 minutes.
    • Serve with Cambrooke Short Grain Rice.

  • Bruschetta

    Bruschetta

    Ingredients:

    • 1/2 Cambrooke Artisan Bread, sliced
    • 3 tomatoes, chopped
    • 2 tbsp. olives, crushed or blended into a tapenade
    • 1 tbsp. balsamic glaze
    • 2 garlic cloves (thinly sliced) in 1 tbsp. extra virgin olive oil

    Optional: Basil or parsley to garnish. Extra virgin olive oil.

    Method:

    • Grill the sliced Artisan bread on both sides until golden.
    • Rub garlic oil over bread until all pieces are covered.
    • Spoon on olive mixture.
    • Season the tomatoes and smooth on top of olives.
    • Top with balsamic glaze and extra virgin olive oil (optional). Add basil or parsley (optional).
