  • 2 cups (270g) packed Cambrooke MixQuick
  • 1/3 cup sugar
  • 3/4 cup non-dairy liquid creamer
  • 1/4 cup water
  • 2 Tbs vegetable oil
  • 3/4 cup (100g) blueberries, fresh or frozen
  • Heat oven to 400 degrees F.
  • In a medium bowl mix all ingredients except blueberries until well blended.
  • Fold blueberries into batter.
  • Divide batter evenly among 6 greased muffin tins or line with paper baking cups.
  • Bake 15-18 minutes or until golden brown.
